Dietary alternatives add twist to Thanksgiving

Clean white linens. Glistening crystal glassware. Bottomless helpings of stuffing and mashed potatoes. And last but not least, a brilliantly bronzed turkey at the center of it all.
If you want to snatch your Thanksgiving right out of a Norman Rockwell painting, those are the components your fourth Thursday in November usually requires.
But for some Americans who eat vegan, vegetarian, dairy-free or kosher, that hearty Thanksgiving fantasy isn’t quite the reality. This Thanksgiving, they’ll find clever and healthy ways to sub out some of the most common ingredients –– or concoct their own recipes –– to accommodate their specialized diets.
While alternative diets are on the rise, according to a 2018 Gallup poll, fewer than one in 10 Americans adheres to a specialized diet, with only 5% saying they are vegetarian and 3% saying they are vegan.
