Put those turkey day leftovers to good use with this Turkey Spinach Orzo, a quick and easy one-pot dish that makes cleanup a breeze after a busy Thanksgiving. Best of all, it’s different from classic holiday dishes so it’ll taste like a completely new meal.
Turkey Spinach Orzo
Servings: 4-6 2 cups leftover chopped turkey 1 1/2 cups frozen spinach 2 tablespoons butter 2 cups chicken stock 2 cups orzo 1/2 cup grated Parmesan cheese 1 tablespoon garlic powder 1 tablespoon onion powder salt, to taste pepper, to taste *** In large skillet over medium heat, brown turkey and spinach with butter. Add chicken stock and orzo; cover and cook 10 minutes.
Turn off heat and mix in Parmesan cheese, garlic powder and onion powder. Season with salt and pepper, to taste.
